1st Remove

  • Pain de Poys (Blackeyed pea fritter)
    • Black eyed peas, onion, egg, and salt.
  • Syseros (chickpea puree)
    • Chickpeas, lemon, salt, cinnamon, and sage
  • Frite de Fromage (fried cheese)
    • Mozzarella cheese, asiago cheese, ginger
  • Poivre Noir (Pepper sauce)
    • Beef stock and black pepper

2nd Remove

  • Jacobin Sop (beef soup with chicken)
    • Beef stock, sage, parsley, marjoram, and grains of paradise served over a toasted French bread round topped with melted jack cheese and shredded roast chicken.
  • Sallet de Herb
    • Mixed baby arugula and watercress dressed with orange vinaigrette (orange juice, apple cider vinegar, olive oil, lemon juice) sprinkled with raisins and walnuts toasted in butter

3rd Remove

  • Roast Beef
    • Beef roasted in beef broth, onion, garlic, red wine paprika, cumin, black pepper, allspice, and salt
  • Lemon Rice with peas
    • Long grain rice cooked with salt, cinnamon, ground almonds, currants, white wine, and sweet peas
  • Pickled Vegetables
    • Cauliflower, carrot, celery, peppers, and artichoke hearts brined in white vinegar, peppercorns, salt and clove

4th Remove

  • Faux Peacock
    • Chicken, bacon, onion, garlic, egg, rosemary, thyme, basil, and black pepper
  • Pomme d’orange
    • Pork, egg, cumin, dry mustard, sage, thyme, onion powder, garlic powder, salt and pepper in a sauce of orange juice, lemon juice, and chicken stock
  • Spaghetti nest
    • Spaghetti noodles in a sauce of chicken broth, cream of mushroom soup, white wine, cream cheese, and basil

5th Remove

  • Strawberries in Snow
    • Strawberries, red wine, sugar, cinnamon, allspice, and ginger served over whipped cream on a shortbread cake
  • Claree
    • Cold spiced red wine
